Okay, the long weekend is over. Back to real life, which means back to staring at the fridge at 5pm wondering what's for dinner.

These six are my answer for early summer weeknights - quick to make, not heavy, and nothing that requires you to stand over a hot stove for an hour. Exactly what the week after a long weekend calls for.

πŸ’‘ Tip: The shrimp tacos and the honey garlic shrimp both come together fast - either one is a solid choice on a night when you really don't want to cook but you still want something good.

  • ​Honey Garlic Shrimp. Ready in about 15 minutes and good over rice, noodles, or just straight from the pan. No judgment.
  • ​Baja Shrimp Tacos. Fresh, a little crispy, with a sauce that makes the whole thing. Great for a Tuesday when you want dinner to feel like a small vacation.
  • ​Balsamic Glazed Salmon. Sweet, sticky, and done in under 20 minutes. Looks like you tried way harder than you did.
  • ​Lemon Butter Chicken. Bright, buttery, and served over egg noodles - the kind of dinner that feels like a little bit of a treat on a weeknight.
  • ​Shake and Bake Pork Chops. Crispy, easy, and exactly what it sounds like. The kids will eat it, the grown-ups will go back for seconds.
  • ​Cucumber Tomato Feta Salad. Throw this together while anything else cooks. Fresh, crunchy, and basically zero effort.
