Sheet pan dinners for busy weeknights

Hey Reader,

If you're not doing sheet pan dinners on a regular basis, this week is the week to start. Everything goes on one pan, into the oven, and dinner is done with barely any cleanup. These four are my favorites.

Sheet Pan Chicken and Vegetables

Sheet Pan Chicken and Vegetables

Juicy chicken thighs and colorful vegetables roasted together on one pan. Easy to prep, easy to clean up, and always delicious.

Sheet Pan Sausage and Vegetables

Sheet Pan Sausage and Vegetables

Smoky sausage and roasted veggies on one pan, ready in 30 minutes. A hearty, satisfying dinner with almost no effort.

Sheet Pan Steak and Potatoes

Sheet Pan Steak and Potatoes

Tender steak and crispy roasted potatoes, all done on one pan. This feels like a restaurant meal but comes together in about 30 minutes.

Sheet Pan Salmon with Broccoli

Sheet Pan Salmon with Broccoli

Flaky, perfectly seasoned salmon alongside roasted broccoli, all on one pan and ready in 20 minutes. A weeknight dinner that feels effortless.

Pick one for this week and let the oven do most of the work. Future you will be very pleased with this decision.

This week's recommendation comes from my friend Stacie at Simply Stacie. Stacie and I have been friends for years - she's good people! Since we're doing sheet pan recipes this week - you should see her Lemon Pepper Sole dinner. Sole fillets, mini red potatoes, and green beans all roasted together with a lemon pepper garlic vinaigrette on one pan in 30 minutes. Get the recipe here.
